MALAI KOFTA
(with white gravy)
Ingredients
250 gms Paneer
3-4 medium sized potatoes
salt to taste
A pinch Black pepper
1 tsp Coriander powder
1/2 tsp Garam Masala
2 tbsp Corn Flour
1/2 inch grated ginger
1-2 green chillies chopped
8-10 pcs of chopped cashews
some raisens
1 tsp cardamom powder
oil to deep fry the koftas.
For the Gravy
1 cup water
3-4 medium onion chopped
1-2 green chillies
1/2 cup cashew nuts
1 tbsp oil
1 tsp Jeera/cumin seeds
2 Nos. green Cardamom
1 No. Black Cardamom
3-4 cloves
1 inch cinnamom
1 No. Bay leaf
1 inch ginger grated
1 tsp sugar
1 tbsp coriander powder
1/4 tsp Black pepper
salt to taste
1/2 cup fresh cream
1/2 cup whisked curd
1 tsp Garam masala
1 tsp Kasuri methi

Step 1
Grate the paneer and boiled potatoes in a bowl.Add salt to taste, Black pepper, coriander powder, garam masala, corn flour, and mix well. To this add grated ginger, chopped green chillies mix and kneed well.
Make small roundels and press the center with your thumb.Place some chopped cashew nuts, raisins and a pinch of cardamom powder in the center.Bring the ends together and roll into a ball again.Lightly coat with cornstarch. Dust off excess cornstarch.Rest for 5 minutes before frying.
Fry on medium heat until golden brown.
Step2
Lets start the preparation of gravy.In a saucepan add 3-4 medium sized onion chopped.Green chillies 1-2 Nos, 1/2 cup cashew nuts, 1 cup water and boil for 7-8 minutes.
Cool down completely and grind into a paste.
Step 3
Now in a pan heat 1 tbsp oil. To this add jeera , green cardamom,black cardamom, cloves, Cinnamom stick, Bay leaf, stir fry for 30-40 sec.
Add grated ginger and stir well till the raw smell of ginger goes.To this add the cashew and onion paste.
Cook the mixture on medium flame until the paste is thick.Add 1/2 cup fresh cream, keep stirring continuously cook for 2-3 minutes.
Add 1tsp sugar, coriander powder, pepper , salt to taste and stir well.Now add 1/2 cup curd.Cook until oil separates.Add water to adjust consistency as required.Add garam masala, Kasuri methi and bring to a boil.
Take a serving dish and pour 1/2 of the gravy slowly on to this with the help of a laddle. Place the koftas on this evenly.Cover the koftas with the remaining gravy on top.Garnish with fried cashew and raisins and coriander leaves.
