Cheesy Rice Bowl



This is a perfect restaurant style rice bowl recipe.

Ingredients

Wheat grains 1 cup

Rice 2 cups

For the cheese sauce

2 tbsp salted butter

2 tbsp All-purpose flour/Maida

1-1/2 cup of Milk

2 grated cheese cubes

salt to taste

1/2tsp pepper

For the fried rice

1tbsp butter

1tbsp oil

Mixed vegetables of your choice

(carrot + onions + peas + corns + capsicum + zuchini)

Salt to taste

1 tsp sugar

½ tsp oregano

½ tsp dried basil

½ tsp chilli flakes

2 tbsp red chilli sauce

1 tbsp fresh coriander

Method

1.We are using wheat to add extra taste, crunch and health benefits to the dish. Soak the wheat for minimum 30 minutes. If you have more time soak it overnight.

Take the soaked wheat and boil in a pressure cooker with 1 cup of water and some salt. Give the cooker 4 whistles on high flame and then simmer for 10 minutes.

2.Wash and soak the rice for 10 minutes and simultaneously heat 6 cups of water with a tsp of salt in a saucepan. Once the water gets boiled add the soaked rice.

Cook the rice till its done. Don’t overcook the rice. Once the rice is done, strain the water from the rice and place it on a plate. This will help in rice to cool down

immediately also will prevent forming lumps.

3.At this point add the cooker which is cooled down and strain the boiled wheat from water and keep it aside.

4.So the preliminary preparation of rice and wheat is done. We can start making the cheese sauce. In a non-stick pan add 2 tbsp of butter and allow the butter to melt.

To this add the maida and start stirring vigorously roughly about 30 seconds or so. To this add the milk at room temperature a little at a time stirring continuously.

Stir until you get a smooth and lump free texture. To this add the grated cheese and stir till the cheese is melted. Add a little salt and pepper. Add the salt judiciously as

the cheese and butter are already having salt.

5.Mix the seasoning with the sauce and cook for about 2 more minutes on high flame till the sauce bubbles. Switch off the flame and keep the side aside.

Be careful as this will thicken very soon, so nest to use immediately.

6.At this stage everything has to speed up. Heat a wok and add 1 tbsp butter + 1 Tbsp oil. Add the chopped vegetables stir fry add about ½ tsp of salt and mix. Add sugar,

oregano, dried basil, chili flakes and mix all together. Remove half the quantity of vegetables and keep it aside till serving time.

7.To the wok add red chili sauce mix. This will give a nice red colour to the dish. To this add the boiled wheat and boiled rice and mix all of them together. Add a little more salt and mix well.

The rice is done.





Its time to assemble the dish. In a bowl pour the rice and top it with the stir fried veggies and ½ cup of cream sauce and enjoy!
