Orissa Special Dalma

Well, no other Indian thali offers this wonderful wholesome dish prepared out of pulses and vegetables.It has a typical flavor due to a topping of grounded jeera, red chilli powder mix with oil and spices.


Ingredients

1/2 cup toor dal 1/2 cup chana dal 1 bowl chopped vegetables(pumpkin,brinjal,raw banana, raw papaya, potato) 1 large tomato 1/2 cup grated coconut  1 tbsp Paanch phoron(mix of mustard,cumin,carom,fennel, fenugreek seeds) 2 Dry red chillies 1 inch ginger paste 1/2 tsp turmeric powder 1 tsp cumin 3 tbsp ghee/oil 1 tsp sugar salt to taste



How to prepare Dalma 1.Dry roast the cumin and red chillies and pound it in a mortar and pestle.Keep it aside. 2.In a deep pan, take about 4 cups of water and boil it.Once the water starts boiling add the dals,ginger paste,turmeric,sugar,grated coconut and salt to taste. Cover and cook the dal until it is 50% cooked. 3.To this add the vegetables and tomato.Again cover the pan to cook the vegetables till they are tender. 4.In another pan heat little ghee and add panch phoron. When the seeds start crackling ,add a pinch of red chilli powder to enhance the color of the tadka. Add this to the cooked dal. 5.Finally add the roasted cumin and red chilli powder.Also garnish the dal with chopped coriander leaves and serve with hot steamed rice.

Tip:The recipe Dalma can also be prepared with moong dal. Tip :To make the Dal a bit restaurant style.We can do a slight change to the existing process. Instead of boiling the vegetables with dal.We can stir fry the vegetables in ghee/oil separately until they are 70% cooked then add to the boiled dal and cook further till they are well done. Also to the tempering along with paanch phoron , red chilli powder.Stir fry the grated coconut until light golden.Then sprinkle this tempering on top to give the dal that extra punch and coconut aroma.Believe me you will stop hunting for Dalma in restaurants after having this at home.
