Navratan Pulao

People say that, it was made during the time of Akbar's and like his 9 ratans this dish needs 9 vegetables and dry fruits combinations.So it is known as Navratan pulao and not so simple to make.

But I am telling you guys their is nothing to it.Not even that 15-20 utensils are required to complete this dish.You just need a wok/kadai. Also if you have 9 items in your pantry then it is good.Then the name is justified.However, even if you have only 8 items does not mean that you cannot complete the dish.Its more about the technique then anything else.

Ingredients

1/4 Cup Oil

1 small Potato Diced

1 Carrot Diced

1/4 Cup Peas

2 tbsp Walnuts Halfed

2 tbsp Almonds

1/4 Cup French Beans Cut into 1/2 inch pcs

2 tbsp Cashews half

1/4 cup Califlower florets

100 gms Paneer/cottage cheese cut into cubes

2 tbsp raisens

1 tsp ginger-garlic paste

2-3 garlic cloves chopped

2-3 pepper corns

2 bay leaves

1 inch Cinnamon stick

2 green Cardamoms

1 cup cooked rice

Salt to taste

2 tbsp ghee



Tempering

1 tsp cumin seeds

1/4 cup safron infused milk

1 tsp lemon juice

coriander leaves for garnishing


Method

1.Heat a kadai/wok and pour 1/4 cup of oil and once the oil is heated up add the diced potatoes and stir fry them up til they are 70% cooked.

2.So once the potatoes are almost 70 % done add the carrots and stir fry along with the potatoes.Once the Carrot are almost getting done add the french beans,then the peas.Fry all the vegetables in the order of their cooking time and then strain them from the excess oil and keep it aside.

3.Fry the Cauliflower separately in order to get that nice aroma or you may also fry along with the rest of the vegetables.However, paneer should be fried separately in order to prevent them from breaking.

4.Once all the 9 items viz.potatoes,carrots,french beans,peas,walnuts,almonds,cashews and raisins have been fried and strained from the oil. In the same oil add ginger-garlic paste and mix well.Add 2 tbsp chopped garlic and fry them all together.Now add the peppercorn,Bay leaf,cinnamon stick,green cardamom and mix well.

5.Now add the cooked vegetables and mix well. Now to this add the cooked rice and salt to taste and mix well with light hands.Add 1 tbsp of ghee on top.

6.In a separate pan add 1 tbsp ghee and add the cumin seeds.Once the cumin start crackling add the saffron milk ,little water and add this to the rice.Also sprinkle lemon juice and cover and cook for few more minutes on low flame till steam starts coming out.Roughly around 4-5 mins and then its ready to serve with raita and onion salad.
