Muglai Egg Korma


Ingredients

7-8 Eggs

4-5 medium Onions Sliced lengthwise

4-5 Cardamom

1 Black Cardamom

5-6 Cloves

6-7 Black Peppercorn

1 Cinnamon

3 tbsp Coriander powder

1 tsp Red chili powder

1/2 tsp Turmeric powder

2 tsp Kashmiri Lal Mirch Powder

1 tsp Cumin Powder

1/3 Cup Desi Ghee

1 cup Curd

Salt to taste

1 tbsp Ginger-Garlic Paste

1/2 tsp Garam Masala Powder

1 tsp Kewra essence

Coriander Leaves for Garnishing



Method

1.Boil the Eggs in boiling water for 2-3 minutes and then cover and keep it for 10 minutes and they will be perfectly boiled eggs.

2.Now poke the peeled and boiled eggs with toothpick so that when you cook it in gravy, the flavor gets infused properly.Grate one of the boiled eggs and keep it aside.This grated egg will give a nice smooth texture to the korma gravy.

3.Heat ghee in a Pan/Kadai.If you want you can use refined oil instead of ghee.However, ghee gives a nice taste to this dish.

4.Fry the sliced onion in the desi ghee.Fry the onions till golden brown.Be careful as onions gets caramelized very soon.So once you start getting a slight color in the onions be ready to pick them up in a kitchen towel.Kitchen towel will help drain the excess ghee and make the onions crispy once the onions cool down.

5.Once the onions are done.In the same pan add a pinch of turmeric and 1/4 tsp of red chili powder and start frying the eggs.We have to lightly fry the eggs till you get a light color on the eggs. Don't fry them too long.

6.Check the onions if they have cooled down and are crispy.Make a fine paste of the brown onions in a grinder.

7.In the same pan with left over ghee add the curd.Make sure the flame is not turned on in this stage.Just add the curd and mix it well till smooth.

8.To the curd add the powder spices viz,turmeric powder,red chili powder,cumin powder,coriander powder,kashmiri chili powder, salt.Mix all of them well.Also add the ginger-garlic paste and mix so that there are not many lumps.

9.At this stage switch on the flame on medium flame.And keep stirring the mix for 2-3 minutes.After that cover and cook the curd till oil is separated from it.Keep stirring the mix in between.Roughly after 5-7 min the ghee will get separated from the curd and curry will look glossy.This is the right time to add the boiled eggs and the grated egg.Mix everything with light hands.Also add the brown onion paste.Cover and cook everything for at least 5 mins on low flame.

10.Your Korma is almost done.Add the last few ingredients viz. garam masala, Kewra essence and coriander leaves and mix again everything and serve it with your favorite bread.
