Langar Wali Dal


This Dal does not have any fixed recipe.Technically this dal should not have any fixed recipe as this is a dal which is made in community kitchen in Gurudwara for everyone in the village.And people just come together to make this dal with lots of love and few simple guidelines to make this tasty dal. The texture of this dal is thick and creamy as this is expected to be.As this is a accompaniment for Rotis in mass kitchen.

So lets start with the ingredients list:

For Boiling

1-1/2 cup Sabut Urad Dal, Soaked (Maa Dal)

1/2 cup Chana Dal(choley ki dal)

Salt to taste

1/2 tsp turmeric powder

1/2 tsp red chili powder

1/2 inch ginger chopped

3-4 Garlic crushed

For tempering

2-3 medium onion sliced

1 small tomato chopped

2 tbsp ghee

1 tbsp oil

1-1/2 inch ginger

3-4 garlic

2-3 green chillies

1 tsp cumin seeds

1/4 tsp turmeric powder

1 tsp coriander powder

1 tsp red chili powder

bunch of coriander leaves for garnishing


Method


1.In a cooker boil together everything viz.soaked urad dal,chana dal,salt,turmeric powder,red chili powder,chopped ginger and chopped garlic.Boil it for almost 5 whistles.We have to be sure that both the dals are properly cooked.

2.Once the dal is boiled we will make the tempering in other pan.Add ghee and little oil in a separate pan. As mentioned before this is a dal made in community kitchen so people are not so refined chefs.Hence, the onions for tempering should be chopped roughly.Do not make a paste of fine chopping of the onion.

3.Now once the ghee and oil is heated add the cumin seeds.Once the cumin seeds start crackling add the ginger-garlic paste which is made in a mortar-pestle.Paste should not be fine, let it be a it grainy to make it taste more robust.Fry the ginger-garlic paste till the rawness disappear.Now add the chopped onions and fry them too.

4.Once the dal is cooked open the lid of the pressure cooker and mash the dal with a ladle nicely.

5.Now to the fried onions add turmeric powder,chili powder,coriander powder and roughly chopped tomatoes.Again mix and fry well.

6.Add this masala to the cooked and mashed dal.Now cook this dal for at least 10 minutes on low flame. That's it your tasty dal is ready.Sprinkle some coriander leaves on top and enjoy with Roti,Naan,Kulcha etc.
