Everybody likes fried chicken be it kids/adults.Learn how to make them with me and give your loved ones a special treat.
We cook the chicken in 2 stages
1. By poaching it first
2.Next by frying it
Ingredients
for poaching
1 litre of water
3 onions that are being quatered
2 bay leafs
2 dried red chillies
3 cloves of garlic
2 and 3 cinnamom sticks
5 cloves
juice of one lemon
2-1/2 tsp salt
10-12 pepper corns
1/2 tsp of coriander seeds
5 pcs of chicken drum sticks with the skin
for coating
1 cup all purpose flour
1 cup instant oats
salt to taste
1 tsp black pepper powder
1/2 tsp red chilli powder
1/2 tsp garlic powder
1 tsp cumin powder
3 eggs
oil for frying
Method
1.Boil a Litre of water in a pot.Now while the water is boiling we will add 3 onions that have been quartered, to this add the bay leaf, 2 dried chillies broken into half, 3 cloves of garlic,cloves,cinnamon sticks,juice of 1 lemon, a good amount of salt.Then add the peppercorns and coriander seeds.Bash these seeds in a mortar and pestle so that it releases its aroma into the chicken.Now drop the chicken pieces into the flavoured water.Cook the chicken in this stock water for about 14 mins.Before we start frying it in our next stage.
2.The chicken once poached separate them by carefully picking them from the water and place it on a a flat dish and let it cool to normal room temperature.
In the meanwhile prepare the coating/dredging of the fried chicken.
3.Take 1 cup of all purpose flour,1 cup of instant oats.Season both the coatings with 1 tsp of salt in both the bowls, 1/2 tsp of black pepper in the bowl of flour and 1/2 tsp of black pepper in the oats bowl,1/4 tsp of red chilli powder for flour and 1/4 tsp of redchilli powder for the oats,1/4 tsp of garlic powder for flour and 1/4 tsp for oats.Now whisk all the seasoning in both the bowls separately one after the other. In a third bowl whisk the three eggs.
4.At this stage we are ready with the coating for the chicken. First comes the flour.We will dip the chicken pieces into the bowl of flour and coat it evenly with the flour.Remove the excess flour.Now dump it into the egg.And for that final stage of crispiness coat the chicken with the oats.
Now continue this same process for the rest of the pieces of chicken,flour first, into the eggs and then the oats.
Now once the chicken is ready.Deep fry them in a kadai or wok in oil.
