Ingredients
3 cups rice
1/2 cup chana dal
1/2 cup toor dal
4 tbsp urad dal
1 cup sour curd
1-1/2 tbsp ginger-garlic-green chilli paste
Salt to taste
1/2 tsp Turmeric powder
1/2 tsp red chilli powder
1 tbsp Sugar
1 tsp soda
Method
1.Wash and soak the rice,tour dal, chana dal and urad dal for 5-6 hrs.
2.Strain the excess water from the soaked grains and then grind it with the help of the curd.Let the paste be a little grainy.
3.Now leave the batter for 5-6 hours to let it ferment.If its winter then it will take a little longer to ferment around 7-8 hours.
4.After fermentation our batter is ready to get steamed.Mix in the rest of the ingredients except the baking soda.
5.Mix in the ginger-garlic-chilli paste,turmeric,sugar and salt.Mix all the ingredients well and keep the batter for 10 mins more. In this 10 mins the sugar will dissolve well in the mixture.
6.Grease the plate in which we are going to steam the dhokla. Keep the steamer set ready and put it on flame.
7.Take a portion of the batter in a separate bowl and mix in the baking soda just before steaming.Once you mix the soda stir the batter in one direction only.
Note: Don't mix soda to the entire batter if you are not steaming them at the same time.
8.Pour the batter onto the greased tray once the soda is properly mixed.Spread it evenly.Sprinkle the red chilli powder on top of the batter.Tap the plate a few times to remove excess air bubbles.Place the plate on the steamer and steam it for 10-12 mins.
9.Check for the done-ness of the dhokla by inserting a knife at the center.Once the steam is cooled down cut the dhokla into small pieces and serve it with green chutney.
