
Ingredients
For the potato mixture
4 medium potatoes
2 tbsps Vegetable oil
1/2 cup onion chopped
1 tbsp ginger garlic paste
1 tsp green chilies chopped
1/2 tsp turmeric powder
1 tsp roasted cumin powder
1/3 tsp garam masala
1/2 cup coriander leaves chopped
For the Batter
1 egg lightly beaten up
4 tbsp All-purpose flour
1/2 tsp pepper crushed
1/2 tsp Baking Soda
salt 1/2 tsp
Other ingredients
6 hard boiled eggs
1/2 cup Maida
2 cups Bread crumbs, I used Panko
Refined oil for deep frying
Black salt to sprinkle while serving
Method
1.Boil the potatoes, peel them and mash them in a bowl.
2.In a pan heat 2 tbsp of oil add the ginger-garlic paste and green chili chopped.Once the aromatics are fried for a minute so that the raw smell goes. Add the chopped onion and fry till the onions are light golden in color.
3.Now add the turmeric powder, cumin powder, garam masala and mix well.To this add the mashed potatoes and salt to taste.If required spinkle a little water and then mix everything well.
4.Fry the potato mixture for some time stirring well for atleast 10 mins.
5.Now switch of the gas and cool the potato mixture for the next step.
6.Now slice the eggs into half lengthwise. So from 6 eggs you will get 12 pcs of egg devil.
7.Next prepare the batter for the cutlets.Mix all the ingredients of the batter in a bowl viz.egg,APF,black pepper,Baking soda and salt.Add 1 tbsp of water at a time to make the batter to avoid any lumps.The batter should be of pan cake batter consistency.That means Batter should be smooth and thick.
8.Start making the cutlets.Once the potato mixture has cooled down add the coriander leaves to it and mix well.

9.Take half of a boiled egg and cover the egg with the potato mixture to form a shape of a egg.Prepare similarly all the half eggs with potato mixture.
10.Take one oval cutlet at a time and roll it on All Purpose Flour.Dust the excess flour and then dip it in the batter.Now cover the cutlets with bread crumbs from all the sides.
11.Repeat the above steps with all the portions, first dry flour, then batter and then bread crumbs.Once all the devils are ready keep them in refrigerator for atleast 4 hours or overnight.
12.Heat the Oil in a deep pan till smoking point and fry 2-3 devils at a time till golden brown.Serve them with salad,ketchup and a sprinkle of black salt.
