Dhokar Dalna/Chana Dal Sabji

Ingredients

1 cup Soaked Chana Dal (Soaked for 4-5 hours) 1 tsp Roasted Cumin Powder 1 tsp Roasted Coriander Powder 1/2 tsp Garam Masala Powder 1/2 tsp Nigella Seeds /Kala Jeera 3 tsp refined oil 1 tsp Ghee 1 tsp chilli powder 1/2 tsp turmeric powder Salt to taste 1 tsp Ginger paste 1 bay leaf/tej patta 2 dried red chillies 1/2 tsp Panch phoron*** 1 tbsp paste of cumin seed+mustard seed+poppy seed 1 tomato puried 1 large potato cut into long wedges.

Method

1.Make smooth paste of soaked chana dal with a green chilli in blender.To this paste add garam masala,roasted cumin powder,roasted coriander powder,salt to taste,1/4 tsp turmeric powder and 1/4 tsp ginger paste.(Remaining ginger paste preserve it to make the gravy). 2.Now mix the entire spices well with the chana dal paste. 3.For making the chana dal cakes we need to heat a nonstick pan and pour 1/2 tsp oil in it.Now add the Nigella seeds to the pan.Pour the chana dal paste immediately and keep stirring the paste in the pan.Until the lentil mixture gets a little dry and leaves the sides of the pan.

This Process does not take much time.

4.Now pour the prepared mixture in a plate.The plate should be little brushed with few drops of oil. 5. Press the dal mixture on the plate and evenly spread all through out.Since the mixture is very hot.Wash your hands in cold water and then press it.Or you may use a wooden spoon to spread it.I prefer hands.

6.After 5 minutes cut the lentil cake into diamond shape with the help of a knife. 7.In another large pan heat some oil about 1-1/2 tsp and put all the dal cakes one by one.Fry the cakes until golden brown from all the sides.

8.In the same pan add the remaining 1-1/2 tsp oil.To the oil add bay leaf,dry red chillies,paanchphoron. 9.After stirring the dry aromatics into the oil add the potato wedges.Fry the potato wedges till golden color.Now add the cumin+mustard+poppy paste.Add Ginger paste,red chilli powder, and a little water and fry till the mixture well.So that the raw smells goes. 10.Add turmeric powder and tomato puree.Mix the entire masala well until it becomes glossy. 11.Add water about 2-3 cups.Now add salt to taste.Cover and cook for 5-7 mins.After that add the chana dal cakes into the gravy and cook another 5 minutes.At the end add ghee and serve with hot rice.

***Panch phoren is a mixture of fenugreek seeds(methi dana)+Fennel Seeds(Saunf)+Mustard seeds+Cumin seeds(jeera)+Carrom seeds(Ajwain)
