Chicken Patiala

This is famous dish of punjab which is nutty,creamy and delicious to taste.

Ingredients 

750 gms Chicken


for marination

1/2 cup curd

1/2 tsp garlic paste

1/2 tsp ginger paste

1/2 tsp turmeric powder

1/2 tsp red chilli powder

1/4 tsp pepper powder

and some salt to taste


for gravy

3 tbsp oil

1/2 inch of cinnamon

2 green cardamom

2 cloves

1/2 tsp cumin seeds

1 tsp finely chopped ginger

1 tsp finely chopped garlic

4 medium onion chopped

1/2 tsp turmeric powder

1/2 tsp chilli powder

1 tbsp coriander powder

2 medium tomatoes chopped

2 finely chopped green chillies

for the finishing gravy 

1 tbsp oil

1/2 tsp cumin seeds

1 tsp ginger chopped

1 tsp garlic chopped

1 cup of methi leaves/fenugreek leaves finely chopped

(which is chopped and mixed with some salt which will release some bitter water.Throw that water,wash the methi again and use it)

1 medium  onion diced

1 capsicum diced

1/4 cup turmeric

1/2 tsp chilli powder

1/2 tsp cumin powder

1/2 tsp coriander powder

1/2 cup cashew paste

1/2 tsp garam masala powder

1 green chilli finely chopped

1 inch ginger julienne

1 tsp kasoori methi

1/4 cup fresh cream

1.Here I have taken 750gms of chicken in a bowl.To this we add 1/2 cup curd,1/2 tsp garlic paste,1/2 tsp ginger paste,1/2 tsp turmeric powder,1/2 tsp red chilli powder,1/4 tsp pepper powder and some salt to taste.Mix all of them together and keep it aside.

2.In a kadai we will heat 3 tbsp oil and once the oil gets hot add the whole spices 1 inch cinnamon,2 cardamom,2 cloves.And once they release their aroma , add 1/2 tsp cumin seeds.Then add the chopped ginger and garlic.Fry this until the raw smell of ginger and garlic goes away.Now we will add 4 medium sized onion chopped.Saute this till it is nice and brown.

3.Once the onion are nice and brown add 1/2 tsp turmeric powder,1/2 tsp red chilli powder,1 tbsp of coriander powder and saute this all together.

4.At this point add 2 medium sized tomatoes finely chopped.Cook the tomatoes until they are nice and soft.Add quarter cup of water at this point so that the masala doesn't get burnt.

5.Once the tomatoes are nice and soft .Remove half of this masala and keep it aside.Which we will need to finish the gravy.

6.Now in the remaining masala we will add our marinated chicken.Saute the chicken for about a 5-7 minutes.Then add 2 chopped green chillies. Mix it well.Now cover and cook the chicken on low to medium heat till it is perfectly done.

7.Now we are going to use the masala that we removed to make another gravy.Which we will use to finish our dish,.

8.In a pan we will heat 1 tbsp oil, then will add 1/2 tsp cumin seeds and allow this to splutter.Then we will add chopped ginger,chopped garlic.Now here we are going to add methi leaves.Saute this for a minute more.Now add the diced onion and diced capsicum saute for a minute.To this add 1/4 tsp turmeric, 1/2 tsp chilli powder,1/2 tsp cumin powder,1/2 tsp coriander powder.Mix them well.

9.Now add the remaining masala that we have removed in our previous step, give it a good mix.Now add the cashew paste.This gives the gravy nice nutty flavor.Now add the salt to this about 1/2 tsp and 1/2 cup water.Let it cook for 2-3 minutes till then check the chicken.If it is cooked add the finishing gravy to it.The gravy will start looking creamy.

10.To this add garam masala,kasoori methi,1 chopped green chilli,ginger juliene and mix well.Cover and cook for another minute.Now lastly add cream and coriander leaves.Enjoy with Naan or parantha or rice.
