Ingredients
2 tsp Sugar
2 tsp/1 packet instant yeast
2 cups of All purpose flour
2 tbsp Milk Powder
salt to taste
1 tbsp butter +for roasting
some coriander leaves
Method
1.The first step is to proof the yeast.In a small bowl take 1/2 bowl of warm water.To this add the sugar and mix till the sugar is half dissolved.Once the sugar is slightly dissolved we will add yeast to it.Now we will give it a mix and keep it aside for 10 mins.
2.After 10 mins the water will be very frothy.If it is not please dont proceed.Because this water is the key ingredient to proof your kulcha dough.
3.Now add this to a large bowl.To this add the flour, milk powder,salt,softened butter,coriander leaves.If you done want to add milk powder please use warm milk in step 1.
4.Get your hands little dirty and mix the dough into a sticky /soft dough.If you want you can add a bit of water at the end we want a soft and sticky dough.
5.Now take a large plate for kneading it further.After about 5-6 mins of kneading the dough becomes smooth and non sticky.This process is also known as gluten formation.
6.The dough is again transferred to the bowl and cover this with a damp cloth and keep it for an hour or until it is doubled in volume.
7.After dough is doubled in volume sprinkle dry flour on the dough and punch it.Deflate the dough gather the dough and divide it into smaller portions.With this recipe you will be easily able to make 6 thick kulchas or 8 thin kulchas. 8.Now take a rolling pin and a chakla. Roll this into a kulcha. Use ample of dry flour.Shape your kulchas as per your preferred round/oblong shape.Thickness is also upto you. 9.Now take a tray.On this tray spread a wet cloth.Over this cloth sprinkle some good amount of dry flour.Place your kulcha on the tray . 10.Now keep the kulchas aside for 30 mins.They will double in volume.Sometimes it takes a little longer. 11.To make the kulchas heat a tawa. Holding the kulcha in one hand apply water in one side of it.Place the side on the tawa where water is applied.Make sure you use iron tawa. Dont use non stick tawa for this. 12.Cook the kulcha for about 30 mins.Place a cover on top.So that it cooks evenly.After 30 secs apply water on the top of the kulcha and flip the tawa on the flame side just for 30 secs more.Our kulchas are half done and can be stored in the refrigerator for 2 days. To serve the kulchas. Heat butter and coriander leaves in the tawa. And roast your kulchas in this butter and serve them with Pindi choley.
